Yields 9 servings
2 1/4 cup rolled oats
1/2 cup chopped raw pecans
1/2 cup raisins
2 tablespoons flax seeds
1 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1/4 teaspoon chili powder
A pinch of salt
3 tablespoons unsalted butter
1/4 cup honey
1/4 cup palm coconut sugar
Preheat the oven to 350 degrees.
In a large bowl mix together the oats, pecans, and all the spices.
Evenly spread this out on a baking sheet.
Toast in the oven for 8-10 minutes.
Meanwhile on the stove top over medium heat, melt the butter, honey and palm sugar. Heat until the sugar crystals dissolve. Then remove from the stove.
Once the oats and nuts have toasted place them in a large bowl with the raisins and flax seeds.
Carefully pour the liquid mixture into the bowl with the other ingredients. With a spatula, mix it all together so that everything is coated well.
In a 9x9 baking dish lined with parchment paper, pour the granola mixture in. Evenly spread the mixture with a spatula.
Place this in the fridge for a minimum of 2 hours. Once the granola has set, remove it from the fridge and from the parchment paper and cut into 9 servings.
Wrap in plastic wrap and keep in an airtight container or baggie in the fridge. Grab one for a great mid-day sweet, salty, and spicy snack.
