Olive oil and vinegar can get a bit redundant on salads. You want to always enjoy your greens, but when you put the same dressing on it every time well its not so exiting. Bottles dressings are terrible for you. They are loaded with ingredients, the more palatable the more ingredients. They contain many preservatives and chemicals, which salad dressings should not contain. So here is a very simple one to make and you can make it in a larger batch and it will keep for 5-10 days in an airtight container. Brighten up your salads, enjoy your greens, and make the dressings fun!
Yields 2 servings
Time: 5-10 minutes
1/4 cup fresh flat leaf parsley
1/2 lemon or 1 lemon juiced (depends on your taste buds)
1/4 cup olive oil
1 tablespoon crumbled feta cheese
A pinch of Salt
1. Place all ingredients in a food processor, blender, or any sort of mixer. Blend until desired smoothness. Spoon over salad!
