One Pot Chicken and Kale Soup

Everyone loves a one pot recipe. It literally makes like so easy, especially when you need to get a meal on the table with little hassle and a quick simple clean up. Soups are a great one pot kind of meal. You can add everything and anything to your soups. It is a balanced meal all in one, which is awesome!!! You only have to make this one recipe and you are done cooking. HELLO EASY! 

My mom is great at making soups. I usually go over and eat with my parents when she makes soups, or take some for lunch. She is a great soup chef haha! So this recipe is a combination of my mom's chicken and potato soup with a bit of a flare to it. I like to add textures and colors to my dishes so with the addition of kale and the very fall seasonal butternut squash that I am seriously obsessed with right now this recipe is a simple and definitely yummy warming meal. Also now that we are the fall chilly months the temperature is dropping and the colds are approaching. Always having a soup recipe ready to go is a must. So stay warm and cozy with this one pot chicken soup recipe. 

Recipe:

Yields 4 servings 

Time 35-40 minutes 

Ingredients:

5 boneless skinless chicken thighs - diced 

2 boneless skinless chicken breast - diced 

4 cups chicken stock 

3 carrots - diced 

2 celery stalks - diced 

1 small onion - small dice 

2 small russet potatoes - peeled and diced 

1 cup butternut squash - cubed 

2 large hand fulls of kale 

2 tablespoons olive oil

Salt and Pepper 

Directions: 

1. Add the olive oil to a large pot over medium heat. Peel and cut vegetables, except the kale, and add to the large pot. Season with salt and pepper. Let this saute for 5 minutes. 

2. Meanwhile on a cutting board cut the chicken breast and thighs into bite size pieces. Season well with salt and pepper. Add this to the pot and saute for a few minutes. 

3. Add the stock/broth. If you would like you can add more stock to the soup. Season the soup with some salt and pepper. Bring this to a light boil. Cover the pot and allow the soup to cook for 15-20 minutes covered and over low heat. 

4. After the soup has cooked for 15-20 minutes add the kale and stir. Bring the soup to a simmer and leave the pot uncovered for 5-8 minutes to bring together all the flavors. 

Serve warm and enjoy!
