Dutch Oven Sherry Roasted Chicken

Roast chicken is one of the those dishes that smells like comfort and warmth. The use of herbs like rosemary and sage gives it that hearty earthy and aromatic flavor. Roasting a chicken I think is the way to someones heart. I have never met a person who doesn't like roast chicken. It just isn't possible, everyone loves it. This dutch oven sherry roasted chicken is a little extra special. Why you ask? Well by using dry sherry and red wine the sauce that forms at the bottom of the dutch oven is literally heaven. It is has a strong forward flavor with the soft delicate tender meat of the chicken and creamy potatoes and earthy taste of the mushrooms. This one pot simple yet very elegant roast chicken dish will win anyones heart over. If it is your family, a group of friends, a special someone, or a holiday get together you won't go wrong with serving up this delicious meal. 

Roast chicken was always a weeknight meal for us growing up. I loved it so much! Walking into the house my tummy would start to rumble from the delicious smells coming from the kitchen. We would always have potatoes with our roast chicken, typically roasted in the oven along with the chicken. It was a simple meal to prepare for my mom for our family. It was a meal I would make a bunch in college and the bonus was the leftover chicken and potatoes meant I have a few meals in one dish. That was great in college! My boyfriend makes us a delicious roast chicken with mashed potatoes is beyond mouth watering. I always ask him to make it for me because it is so comforting and hearty. So my connection to roast chicken is something special. I wanted to turn up the volume and make a more refined dutch oven roast chicken.

Using wine, sherry, rum, or beer to cook with elevates the flavor a dish. I was teaching a cooking class a few weeks ago to a group of women and they asked, "Does it really change the flavor of the dish?" The answer is yes! It creates a depth to the dish, a more refined and elegant flavor. Depending on the wine or alcohol you use to cook with determines the flavors you will get from the dish. Since chicken has a light flavor to is and I didn't sear the chicken before putting it in the dutch oven the chicken has a delicate flavor. To get that more robust rich flavor I added 2 additional flavors of sherry and red wine. This intensifies the flavors tremendously. It takes a roast chicken from simple and good to decadent and wow. This recipe of dutch oven roast chicken is extremely simple and tastes like an elegant rich meal. 

Recipe 

Yields 4-5 servings 

Time 2- 2.5 hours 

Ingredients:

1 3.5 lb organic chicken 

1 yellow onion - large dice 

4 carrots - peeled and oblique cut 

1 pint button mushrooms 

2 garlic cloves - peeled and smashed 

1 lemon - quartered 

8-10 yukon petite potatoes 

3 rosemary sprigs 

2 thyme sprigs 

8-10 sage leaves - minced 

Salt + Pepper 

1/4 cup Dry Sherry 

1/4 cup Red Wine 

Directions:

1. Preheat the oven to 400 degrees. 

2. Cut vegetables and place in the bottom of a dutch oven. Season with salt and pepper and add half of the fresh herbs. 

3. In the cavity of the chicken add the garlic cloves, remainder of the herbs, and lemons. Season the chicken well with salt and pepper. Place the filled and seasoned chicken on top of the vegetables of the dutch oven. 

4. Add the sherry and red wine. Cover the dutch oven and place in the oven to cook for 50-65 minutes depending on the size of the chicken. Make sure the chicken reaches a temperature of 165 degrees. 

5. Once the chicken has cooked carefully remove it from the dutch oven and allow it to rest for 8-10 minutes before carving. Serve with vegetables and enjoy.
