Needs a go to delicious treat that doesn't have loads of bad ingredients in it? A crispy treat it is!
It is very simple, a fun recipe to make if you have kids because you can get them in the kitchen with you and it isn't too messy, and it's wonderful to always have in the fridge. Also this is a perfect dessert to take to a casual get together, summer BBQ, or a little treat to bring a neighbor. Really this will become a staple recipe in your house. You can adapt the peanut butter to any other nut butter of your choice if you prefer.
Yields 10-15 servings
Time: 10 minutes to make, 1-2 hours to set
3 cups brown rice cereal
(I used Whole Foods 365)
1 cup Organic Peanut Butter Creamy (any nut butter works)
1 cup semi sweet chocolate chips - melted
1/3 cup honey
1. In a microwave safe large bowl, add the PB, chocolate, and honey. Microwave for 1 minute. Stir and microwave for another 30 seconds, stir until chocolate is melted.
2. In a large bowl measure out the brown rice cereal. Add the melted chocolate, PB, and honey to the bowl. stir with a spatula until the cereal is well coated.
3. Line a 9 x9 or 8x8 baking dish with parchment. Evenly pour the the mixture, smooth with the spatula and leave in the fridge for at least 1 hour. It is best for up to 2 hours.
4. Remove the solid block from the parchment paper and cut into even square. Store in the fridge until ready to serve.
