Chocolate Chunk Iron Skillet Cookie & Chocolate Magic Shell

I love a good chocolate chip cookie and making it in an iron skillet makes the edges so crispy and the center so gooey. That is just the best. But every decadent dessert deserves to be garnished properly. That's where the homemade magic shell comes in. I remember growing up and asking my mom if we could get the magic shell to top the ice cream. She would let us occasionally get it, but now looking back at it, I can't believe I used to eat that stuff. It is filled with so many chemicals and bad ingredients. 

Making your own magic shell is seriously so simple you will never want to go back to the old stuff. 

Yields 4 servings of the cookie 


4 tablespoons room temperature unsalted butter

1 egg 

1/3 cup bread flour - sifted 

1/3 cup pastry flour - sifted 

1/4 teaspoon sea salt 

1/4 teaspoon baking soda 

1/2 teaspoon baking powder 

2/3 cup brown sugar 

3 tablespoons cane sugar 

1 teaspoon vanilla extract 

1/3 cup chocolate chunks 

Magic Shell ingredients:

1/2 cup Ghiradelli Bittersweet Chocolate Chips 

1 teaspoon coconut oil


In a stand mixer, blend together the sugars and butter until a nice smooth consistency is created. Scrape down the edges of the stand mixer. 

In a separate bowl add all the dry ingredients.

Add the egg and vanilla extract, mix to break the egg yolk. 

With the mixer on low, add the dry ingredients. 

Fold in the chocolate chunks. Place the cookie dough in a bowl topped with plastic wrap and let it chill for about 4-6 hours. 

Preheat the oven to 350 degrees. Lightly grease the iron skillet with butter or coconut oil spray. 

Add the cookie dough and let evenly spread it in the skillet. 

Place it in the oven and let it bake for 15-18 minutes. 

Once the edges are golden remove the cookie from the oven and let it cool for about 15 minutes.

To make the magic shell, place the chocolate chips in a microwave proof dish with the coconut oil. Microwave for 30 seconds, remove and stir. Microwave for another 30 seconds, remove and stir until the chips are melted.  

Serve with ice cream or non-dairy coconut ice cream. 

Top it with the chocolate magic shell.
