Ribbon Carrot Salad


2 large carrots - peeled into ribbons

1 tablespoon fresh parsley - minced

1 tablespoon raisins

1 tablespoons raw almonds


1 tablespoon extra virgin olive oil

1/2 lemon - juiced

a dash of turmeric

1/2 tablespoon red wine vinegar




Place all salad ingredients in a bowl and toss together with dressing. 

Garnish with more fresh parsley. 



Arroz con Pollo 

A traditional Cuban dish. It is one of my favorite that my Abuela (grandmother) makes. This is a great dish to prepare for guests. 

Abuela has her special touch to the dish and I have recreated a delicious dish to be a bit more nutritional. 

Ingredients (Yields 4 servings):

2-3 organic chicken legs

1 1/2 cups jasmine rice - rinsed and drained

1/2 red bell pepper- diced

1/2 green bell pepper- diced

1 small yellow onion - diced

1 garlic clove - minced

1 tablespoon butter

1/2 tablespoon olive oil

1 3/4 cups broth 

6 -8 asparagus spears- dice but leave 2 whole

1/2 cup frozen peas

a pinch of saffron threads

1 sprig of fresh oregano 




In a large skillet over medium heat, heat butter and olive oil. Brown the skin side of the chicken. 

Place browned chicken on a separate dish. Lower heat of the skillet to medium-low. Add more olive oil or butter if necessary. Sweat onions for 3 minutes. 

Add bell peppers, asparagus, and garlic. Once the vegetables have cooked for 5 minutes add saffron, oregano, and rice. 

At this point you can either leave the chicken whole or dice into bite sized pieces. 

Cover the rice with broth and water and add the chicken back to the skillet.  In the center place the 2 whole asparagus spears.

Bring to a light boil, cover the skillet, and lower heat to low. Cook for 20-23 minutes. 

Once the rice has cooked, add the frozen peas and fluff.

Serve warm. This dish is best a few hours after preparing for the dish to be even more flavorful.
