Baked Strawberry & Peanut butter Oatmeal

Peanut butter and jelly one of the best combinations to ever exist. Let's be honest! Now as an adult I don't make many PB & J sandwiches, but it is still one of my favorite flavor combos, so I wanted to make something with the same ingredients. Why not a breakfast oatmeal? 

This a delicious and hardy breakfast recipe. I recommend making it either on the weekend or if you have some time to spare in the morning. You can always make it ahead of time (the night before) and heat it up in the morning so it is ready to go when you are. 

So many times we leave the house without eating breakfast because we are either in a rush, woke up too late, or we aren't very hungry when we wake up. Skipping breakfast isn't a good idea. We want to start our metabolism upon waking, give us fuel and energy in the form of food to start our day. Hence the name of the meal, breakfast, breaking the fast from sleep. If we skip breakfast we tend to eat more later on in the day, which we actually want to do the opposite. It is best to eat more earlier and less in the evening so that we use the energy we consume during the day. If we eat the majority of our food in the evening we won't be able to expend or use the energy and therefor it just sits and that can cause us to gain weight. 

So give this recipe a try to keep you satisfied and rev up your metabolism! 

Yields 2 servings

Ingredients:

1 cup of strawberries - remove tops and quartered

1/4 cup organic peanut butter

1 cup rolled oats 

2/3- 3/4 cup water

2 tablespoons honey 

1 teaspoon brown sugar - optional 

A pinch of salt 

Method:

Preheat the oven to 350 degrees. 

In a sauce pan, add the water and rolled oats. Add 2/3rd cup first and if is too dry add more, but keep in mind that strawberries contain a lot of water so some of their liquid will make the dish more liquidy. Add a pinch of salt, strawberries, and the honey. 

Bring this to a boil, lower the heat to low and cover. Allow the oats and strawberries to cook for 10 minutes. 

Add the peanut butter to the cooked oats and stir to incorporate. You can eat it at this point if you prefer to not bake it. It is yummy! 

If you are going to bake the oats, pour it into a baking dish. 

Optional to sprinkle with some brown sugar, top with some rolled oats and bake for about 15-18  minutes. 

Remove from oven and allow it to cool. 

Serve and enjoy!!!
